Super healthy cupcakes that your kids will love (no dairy, no sugar, gluten free)

 

My son is three and therefore loves cookies, cupcakes and anything else chocolate. Actually, it probably

has more to do with him being my son than it does him being three.

Despite my love for all things junk food, I actually eat what most would consider some strange food. I

try to eat healthy. The problem is, “healthy” is such a vague term. Depending on your philosophy, one

person’s junk food is another person’s health food. So, let me take a second to define what I think is

healthy,  not in an attempt to persuade you, but just so you know what we are talking about. I prefer

natural, unaltered ingredients whenever possible. I figure throughout all the fads, fruits and veggies are

always safe.  But, don’t be fooled. These cupcakes are still very rich as they are not by any means low

fat.

About a year ago I discovered some raw food blogs. Although I’m not going to advocate that as a

lifestyle (neither am I against it), I will say that it led me to some amazingly delicious recipes – all of

which contain whole ingredients, heavy on veggies. Unfortunately, once those recipes are labeled as

raw, they are kind of scary to most people. However, I believe it is entirely psychological. I came to

believe this after seeing my sons reaction to this and other recipes. He just calls them cupcakes with no

idea they are healthy.

So, today, I wanted to share a very delicious healthy cupcake recipe that, although raw, is rich, chocolaty

and even comes with icing. Yum! Get ready to put aside your doubts, and jump head first into some guilt

free chocolate yummness.

First, let’s decide what is going to go into these babies!

Cake:

1 Cup Raw, soaked nuts (I used hazelnut, pecans and macadamia)

2. pitted medjool dates

2 teaspoons cocoa powder

1 teaspoon raw local honey

Icing:

½ Avacado

3 pitted medjool dates

2 teaspoons cocoa powder

1 teaspoon vanilla

Pinch of salt

Let’s start making the cake.

As you can see, the “cake” portion of the cupcake is basically a fruit and nut mixture. If you’ve ever had

a Larabar, this is going to be very similar. Since we aren’t using flour or eggs, we’ll have to get it to stick

together somehow. The best way to do this is to soak the nuts for about an hour before you begin. This

will get them very soft. It also mellows the flavor, especially if you are using a bitter nut like a walnut.

Put the soaked nuts in a food processor and process until finely chopped. If you start making a nut

butter, you’ve gone too far.

Once the nuts are chopped, add the other ingredients and continue processing. In about 30 seconds,

you’ll discover a thick chocolate batter like mixture. It reminds me of a very rich German chocolate cake.

That’s it for the cake portion! No baking required. You have a few options here, depending on what your

end goal is here. Normally, I like to roll these in little balls and use them as quick energy balls when I

need a snack. It is essentially a little fruit and nut bite. It is high in protein and fiber, so great for energy

and for keeping me full. However, since I was aiming for cupcakes here, I’m going to need some icing!

So, I spooned these in some cute cupcake wrappers and now I’ll get started on the icing.

Here is the part where you’re going to need to trust me. When I tell you what is in this icing, you’re

going to question my taste buds. I promise you, this will taste delicious. It tastes just like chocolate icing!

It it just made from a non-sweet fruit instead of powdered sugar.

Ready? (It will be ok, promise). Take half the avocado and place it in the food processor. Squish it down

a little so it will easily mix up. Now, add the cocoa, dates, vanilla and salt. If you want a sweeter icing,

add a teaspoon of agave nectar as well.

Process all ingredients for a few seconds, then scrape down the processor and reprocess. Do this until

you have an even color (no green) icing. You will know it is mixed well enough if it resembles chocolate

icing. It should have a very similar consistency.

Now, spoon the icing on to the cupcakes. Or, if you are fancy, you can use an icing bag and pipe it on.

And that’s it! Now you have these adorable little cupcakes that are really just made from fruits and nuts!

Chocolate Chocolate Chip Cookies with Sea Salt

OMG I cannot tell you how addicting these were you get the sweet and salty all in one.

What you will need

¼ cup sugar

¼ cup brown sugar

1 table spoon Coco powder

3 table spoons Hershey Syrup

2 cups flower

2 eggs

1 table spoon vanilla extract

2 tablespoons milk

½ package milk chocolate chips

Sea Salt

Mix all ingredients except the sea salt together mix well

Place on greased cookie sheet and sprinkle sea salt on top

Bake at 350 for about 20 minutes

Take out and eat up

Meat ball Appetizers

These are so easy to make and they taste fantastic.  They are great for get together and foot ball day.  A Very easy snack to make.

 

What you will need

Ground beef

Dimples BBQ Sauce

Garlic salt

Pepper

Extra add in for hubby

Shredded cheese

Diced onion

Garlic

 

Wait till you see how easy

In bowl mix everything

Roll Into balls

Cover cookie sheet with tin foil place balls on top

Cook at 350 for 30 minutes remove and add some more dimples to the top of the meat balls

Bake another 5 minutes and bam you are done time to eat.

 

If you are having a get together make them the night before and place in fridge covered take out n the morning and bake and you have a hot appetizer ready for your guests.

Dimples Hot Dog Appetizer

Who says an appetizer should take forever to make.  This one is quick and easy.  Thanks to Dimples BBQ sauce it also tastes fantastic.

What you need

Hot dogs

Dimples BBQ sauce

Pan or slow cooker

Cut hot dogs up.  I had some already cooked so I used those, but if yours are raw it works the same way

 

Place in pan or if you are making a ton for a party in the slow cooker add your Dimples BBQ Sauce

When the hot dogs start to puff up you are done and ready to serve.

I like to leave little cup of tooth picks out so people can use them to eat the yummy BBQ hot dogs.

Asparagus and Chicken

   Dimples BBQ Sauce Asparagus and Chicken Recipe

I love dimples it really does go with everything.  This meal is a one dish and so easy to make.

What you will need

Asparagus

Chicken Thighs

Dimples BBQ Sauce

Olive Oil

Garlic salt

Pepper

 

Cut up the asparagus and cover with olive oil, Garlic Salt, and pepper

Mix up and push to outer edges of dish

Cover chicken thighs with Olive oil, Garlic Salt and pepper and place in the middle

Spread Dimples BBQ sauce over the thighs

 

Bake at 350 for about 45 minutes

Pull out and serve Yum Yum

Chicken honey thighs

As you all know Dimples is our #1 BBQ sauce there is so many different ways to cook with it I have recipe ideas for years. 

For this recipe you will need

Chicken thighs with bone and skin

2 teaspoons lemon

2 tablespoons Dijon mustard

¼ cup soy sauce

½ cup dimples BBQ sauce

3 Table spoons honey

 

This is very easy to make just mix all ingredients.

Put chicken in glass baking dish

Pour mixture on chicken

Bake at 400 for 35-45 minuets

If the sauce started to burn or get lumpy add about ½ cup apple juice while it is cooking

I baste once in-between just to make sure it is coated

When you have about 5 minutes left take out the extra sauce with a baster and put in a gravy bowl.  I serve this separate as a sauce to pour over the top


Pull out and serve. 

Your skin will be flavored perfect and crispy.  Your chicken will fall apart.

Dimples Party Wings

  These take awhile but really are minimum work.  They turned out fantastic.  Of course Dimples is the best BBQ sauce out there I would not make these with any other BBQ sauce.

 

What you need

1 cup chicken broth

1 cup Dimples BBQ sauce

½ can coke (I drank the other half lol)

1 bag or tray of party wings

 

Add everything to crock pot and set on love for about 4 hours

     

Take out and place on parchment paper cover with more Dimples BBQ Sauce

     

Broil for 5 minutes

Flip cover other side with Dimples

Broil for 5 minutes more

Pull Out and serve Ohh so yummy

BBQ Ribs

Dimples Slow cook BBQ Ribs

These take awhile to cook but they are so worth it.

To start off you need ribs (of course), a rib flavour rub, butter, apple juice, honey, brown sugar, Dimples BBQ sauce, and tin foil.

The first thing you do is take off the membrane from the back of the ribs.

Now, ribs NEED to be cooked on a BBQ grill. If you don’t know how to do that, you can find more information here. So, cover the ribs in your dry rub and place on the BBQ at 250 degrees for 2 hours with the lid closed. I turn them over after 1.5 hours. Just cook the top a little bit.

Prepare your tin foil line the bottom with brown sugar, honey, and butter. Put your ribs on top. They on the top of the ribs put on same ingredients. Fold the ribs in the tin foil and add apple juice to the bottom of your tin foil tray. Close up ribs and cook for another 1.5 hour. (Add more apple juice ass it is cooking to keep the ribs moist)

Take ribs off drain any extra juice and coat with your Dimples BBQ sauce wrap back up and cook another 45 minutes.

Take off ribs and let sit for about 5-10 minutes before cutting up. I like to add another layer of Dimples before serving.

Wrapped Pork Loin

Dimples Bacon Wrapped Pork Loin

      Hubby has been wanting something different lately and all I had in the freezer was a pork loin. So we did something a little different that turned out fantastic. Hubby even ate leftovers this is a first for him.

 

What you will need

Dimples BBQ sauce

Rib Rub

Pork Loin

Bacon

 

First I took the Pork Loin and cut it open so it laid flat.

 

I covered the inside with Dimples BBQ Sauce and little rib rub

 

Roll it back up

 

Cover it with bacon I wrap it around and do the overlap method.

 

Please note this is harder to keep together on the BBQ so I bake it.

Bake at 350 for 45 minutes

 

Take out and lightly dust the bacon with dimples bbq sauce

 

Place back in the oven at 400 for about 10 minutes

 

Take out and serve

Slow Cooker Pork Loin

Slow Cooker Pork Loin

 

I do love a great slow cooker recipe, I love even more I can make a double batch and freeze one set to be thrown into the slow cooker at a latter date.

 

 

1 Slow Cooker bag

1 Pork loin

4 Big Potatoes

6 carrots

Brown Gravy

Yep that is it just those few ingredients.

I buy the big pork loin and cut in 1/2.  Put 1/2 in your slow cooker the other 1/2 in freezer bag. Peel and cute potatoes put 1/2 in slow cooker the other 1/2 in freezer bag. do the same with carrots. then mix brown gravy with water or chicken broth your choice. poor about 1 1/2 cups into slow cooker and the same into freezer bag.  put on lid and cook for about 6-8 hrs on low.  Close up freezer bag and freeze. know next time it is quick and easy just throw in in the morning on your way to work, or to run errands and dinner will be done when you get home.  2 quick easy and good meals done in about 15 minutes.

The meat just fell apart.  Now what to do with the left overs, If you hubby is anything like mine he does not eat left overs, so I make it into a new meal.

 

With the meat falling apart i tear it up with a fork separate the potatoes and carrots.  put them in separate containers. next day I add BBQ sauce to the meat and make pulled pork sandwiches, mush up the potatoes and make it into gravy flavored mashed. and baby boy has already eaten all the carrots by know.lol  know I just make three meals out of these few ingredients.
